Saffron rice
A risotto-like rice dish, with saffron as the primary flavour.

Ingredients
- 1 tbsp butter
- 1 medium onion
- 1 cup of risotto rice
- 10 strands of saffron
- 0.5 l vegetable stock
- 100 g strong Cheddar
- salt and pepper
Instructions
- Chop the onion. Add butter and the onion to a pot, cover and cook on medium heat until onions are translucent.
- Add the risotto rice and stir.
- Add all the vegetable stock and saffron.
- Once all the rice is cooked, add grated Cheddar, salt and pepper to taste.
