Rock cakes

Ingredients
- 225 g self-raising flour
- 1 tsp baking powder
- 110 g butter
- 65 g sugar
- 100 g mixed dried fruit
- 50 g sultanas
- 1 tsp mixed spice
- 1 egg
- 6 glace cherries
Instructions
- Mix the flour, baking powder and butter together with fingers until the mixture resembles fine breadcrumbs.
- Add the sugar, dried fruit, sultanas and mixed spice and mix until well-combined.
- Mix in the egg and then the milk until the mixture is stuff and sticky.
- Lightly grease a baking sheet and preheat the oven to 200 C.
- Spoon out six large and uneven piles of dough onto the baking sheet, and top each one with a glace cherry.
- Cook for 20 minutes or until golden brown. Cool and serve.
