Potato cakes
A tasty alternative to mashed potato.

Ingredients
- 350 g potatoes
 
- 1 tbsp butter
 
- 0.5 medium onion
 
- 3 tbsp sour cream
 
- salt and pepper
 
- 2 eggs
 
- 1 tbsp flour
 
- bread crumbs
 
Instructions
- Boil the potatoes until they are cooked.
 
- While the potatoes are cooking, fry the onion in some of the butter until the onion is brown.
 
- Once the potatoes are done, drain them. Add the sour cream, salt and pepper, then mash the potatoes.
 
- Butter a baking tray.
 
- Make the potatoes into 5–8 cm diameter cakes and place on the tray.
 
- Coat the cakes with the remaining egg.
 
- Sprinkle bread crumbs over the cakes.
 
- Bake the cakes at about 200°C until golden brown.
