Potato cakes

  1. Boil the potatoes until they are cooked.
  2. While the potatoes are cooking, fry the onion in some of the butter until the onion is brown.
  3. Once the potatoes are done, drain them. Add the sour cream, salt and pepper, then mash the potatoes.
  4. Butter a baking tray.
  5. Make the potatoes into 5–8 cm diameter cakes and place on the tray.
  6. Coat the cakes with the remaining egg.
  7. Sprinkle bread crumbs over the cakes.
  8. Bake the cakes at about 200°C until golden brown.
