Pork and rice
A creamy rice dish, which is handy for using up leftover pork from a roast dinner.

Ingredients
- butter
- 1 medium onion
- 250 g pork
- 100 g mushrooms
- 1 cup of rice
- 2 cups vegetable stock
- 150 g sour cream
- salt and pepper
Instructions
- Chop the onion and mushrooms.
- Add butter and the onion to a wide and flat pot, cover and cook on medium heat until the onion becomes translucent.
- Add the pork and mushrooms, and cook until done.
- Add the rice and vegetable stock, cover and cook until all the stock is absorbed.
- Add the sour cream and salt and pepper, mix and serve.
