Lemon sherbet

A refreshing, lemon flavoured alternative to ice cream.

Instructions

  1. Chill the container which will be used for the sherbet.
  2. Gently simmer the sugar and water in a pot until all the sugar has dissolved.
  3. Let the sugar water cool for a few minutes.
  4. Add mascarpone and lemon juice to the sugar water, and stir until well mixed.
  5. Pour the mixture into the chilled container, and place in the freezer.
  6. Stir with a fork whenever ice crystals start to form, to give the sherbet a soft texture.
