Lemon sherbet
A refreshing, lemon flavoured alternative to ice cream.

Ingredients
- 200 ml lemon juice
- 200 ml water
- 285 ml sugar
- 1 tbsp mascarpone
Instructions
- Chill the container which will be used for the sherbet.
- Gently simmer the sugar and water in a pot until all the sugar has dissolved.
- Let the sugar water cool for a few minutes.
- Add mascarpone and lemon juice to the sugar water, and stir until well mixed.
- Pour the mixture into the chilled container, and place in the freezer.
- Stir with a fork whenever ice crystals start to form, to give the sherbet a soft texture.
