  1. Cut the onion, bell pepper, carrot and potato into small (according to Kat) or large (according to Dave) pieces.
  2. Add butter and vegetables to the pot, sweat on low heat for 20–30 minutes.
  3. Add enough stock to just cover the vegetables.
  4. Add the bay leaf. If you are using barley, add it now. Cover the pot and cook until the vegetables are done.
  5. Stir in the flour, then add cheese, salt and pepper to taste.
  6. Once the cheese has melted, stir in the cream or milk. Make sure it is warm throughout before eating.
