Harvest soup

Ingredients
- 1 tbsp butter
- 1 medium onion
- 1 green bell pepper
- 1 large carrot
- 1 large potato
- vegetable stock
- 1 bay leaf
- 1 handful pearl barley (optional)
- 1 tbsp flour
- Cheddar cheese
- salt and pepper
- 50–100 ml cream or milk
Instructions
- Cut the onion, bell pepper, carrot and potato into small (according to Kat) or large (according to Dave) pieces.
- Add butter and vegetables to the pot, sweat on low heat for 20–30 minutes.
- Add enough stock to just cover the vegetables.
- Add the bay leaf. If you are using barley, add it now. Cover the pot and cook until the vegetables are done.
- Stir in the flour, then add cheese, salt and pepper to taste.
- Once the cheese has melted, stir in the cream or milk. Make sure it is warm throughout before eating.
