Green lentil dahl
A variation on the standard dahl recipe.

Ingredients
- 1 cup split green lentils
- 3 cups water
- salt and pepper
- 2 cassia/cinnamon stick
- ghee
- 1 onion
- 1 tbsp garlic
- 1 tbsp ginger
- 1 tsp turmeric
- 1 tsp ground coriander seed
- 1 tsp ground cumin
- chilli or cayenne pepper
- 2 tsp garam masala
Instructions
- Add the lentils, cassia stick, salt and water to a pot, simmer gently until lentils are soft.
- Chop the onion, ginger and garlic.
- Fry the cumin in ghee, then add onion. Cook until the onion is translucent.
- In the meantime, add turmeric and chilli or cayenne pepper (to taste) to the pot.
- Once the onion and cumin are fried, add them to the pot, including the remaining ghee from the frying pan. Also add garlic and ginger to the pot. Leave them to cook for a few minutes.
- Add the garam masala and pepper to the pot, simmer for 15 minutes.
- Serve with naan or rice.
