Carbonara

Ingredients
- 150 g pasta (spaghetti is traditional, but tagliatelle is good too)
- olive oil
- 100 g pancetta
- 2 eggs
- 100 g Parmigiano-Reggiano (parmesan)
- salt and pepper
Instructions
- Add some salt to a large pot of water and put it on to boil.
- Roughly chop the pancetta and then gently fry it in some olive oil until it is crisp.
- Add the pasta to the boiling water, with a little olive oil to keep it from sticking together.
- Gently beat the eggs together with most of the cheese and some salt and pepper.
- Drain the cooked pasta, then add it back to the hot pot with the pancetta. Quickly add the egg mixture, and stir to ensure that the eggs do not scramble.
- Serve onto plates and add the remaining cheese, and some extra salt and pepper if desired.
