  1. Add some salt to a large pot of water and put it on to boil.
  2. Roughly chop the pancetta and then gently fry it in some olive oil until it is crisp.
  3. Add the pasta to the boiling water, with a little olive oil to keep it from sticking together.
  4. Gently beat the eggs together with most of the cheese and some salt and pepper.
  5. Drain the cooked pasta, then add it back to the hot pot with the pancetta. Quickly add the egg mixture, and stir to ensure that the eggs do not scramble.
  6. Serve onto plates and add the remaining cheese, and some extra salt and pepper if desired.
